Bok Choy Spinach Soup Topped with Black Vegetable Rice

If you're looking for something light, healing, and soul-soothing, this Bok Choy Spinach Soup is happening. Fresh and full of organic greens, colorful bell peppers, and herbs, it’s a clean and delicious plant-based meal with deep flavor. Whether you enjoy it on its own or topped with rich Black Vegetable Rice, you’re in for a healthy treat.

Ingredients needed

For the Soup:

  • Organic yellow and orange bell peppers (chopped)
  • Organic red onion (chopped)
  • Organic green onion (chopped, reserve for the end)
  • Fresh organic spinach
  • Fresh organic Bok choy
  • Organic vegetable broth (low sodium preferred)
  • Plant-based butter or oil (like avocado oil)
  • Organic turmeric
  • Organic dried basil
  • Organic dried parsley
  • Sea salt (or your own seasoning blend)

Optional Topping, Black Vegetable Rice:

  • Organic black rice
  • Organic frozen mixed vegetables (red, green, yellow bell pepper, red onion)
  • Plant-based butter or oil

Instructions:

1. Stir-Fry the Bok Choy
In a pan, sauté chopped Bok choy in plant-based butter or avocado oil. Add your favorite seasonings. Set aside.

2. Stir-Fry the Spinach
In a separate pan, stir-fry the spinach with turmeric, basil, parsley, and sea salt. Let the flavor cook in. Set aside.

3. Sauté the Peppers & Red Onion
Cook your chopped bell peppers and red onion in a bit of plant butter or oil until lightly softened.

4. Making the Broth Base
In a large soup pot, pour in your organic vegetable broth. Add the sautéed peppers and red onion (but not the greens or green onion yet). Cook on medium for 30 minutes.

5. Add Greens & Finish
Stir in the sautéed Bok choy, spinach, and fresh green onion. Let everything simmer gently for another 10–20 minutes so the flavors come together beautifully.

Optional: Add the Black Vegetable Rice                  Cook black rice per package instructions. Separately stir-fry frozen organic veggies in oil or plant butter, then mix them into the finished rice. Scoop a serving on top of your bowl of soup.
